![]() ![]() The four fish dishes were delicious, the deserts were average. We were really disappointed by his attitude, and it made the culinare experience a lot less pleasant. When we left, he vaguely said goodbye while not even looking at us, staring at his phone. Obviously he should not be replacing the sommelier in this restaurant when Ilario Perrot is absent. I felt actually tricked by Valerio, as he seemed to impose his choice, not mine. It did taste nice, and he then triomphantically announced that it was a chardonnay. So he came back again with another bottle and poured some wine to taste while not showing the label. I specifically replied that chardonnay was my least favourite wine. He then came back with a bottle that was not pinot gris, saying that he recommended a chardonnay. He arrived later on with a bottle of pinot noir (considering we only selected fish, this was the least obvious recommendation), so I commented that I was after pinot gris. She mentioned that her colleague Valerio would come to recommend some wines. I then asked one of the ladies for a glass of pinot gris, a rather mainstream type of wine. We ordered cocktails, and even before we finished them they were both taken away. ![]() The restaurant was half full, so there were other tables we would have been able to switch for. We ostentatively looked to fix the problem while we were being observed, but nobody came to help. Our table was swaying and we almost knocked it over when one of us was leaning on it. The service was otherwise excellent, all the ladies that were bringing the food were very friendly. Still, when the appetizers arrived, they had meat in them, obviously Valerio did not pass on the info to the rest of the team. We have had great restaurant experiences in other michelin star restaurants, but we never encountered such a stubborn waiter. In the end we decided both not to have meat. I have also appreciated the great understanding of the wine pairing and the wine recommendation hit its target. We were told by the restaurant manager Valerio this was not possible and that exactly the same menu had to be selected for the whole table. If you like genuine uncluttered culinary experiences (pure, strong to the palate flavors) have dinner here You’ll understand the name of the place as all four elements of the alchemy can be identified in the plates. When we decided to take the high end degustation menu, we asked for one plate (out of the menus of 6 plates) to be changed because one of us is not eating meat. The interior is very nice, and we were welcomed very warmly by a lady. We had lunch last Saturday at Alchimia, as we had something special to celebrate. ![]()
